Pancakes or waffles are one of my go to for a breakfast treat. Pancakes really invite creative. They a blank slate just inviting creative. No I really don’t make plain pancakes. I had some bananas that needed to be used and found some leftover caramel syrup in the fridge.
- 1 1/4 C flour – sifted
- 1 T. baking powder
- 1 T. sugar or 1 1/2 teaspoons Truvia baking blend
- 1/2 t. salt
- 1 beaten egg
- 1 C. milk — may need more if batter is too thick
- 2 T. oil
- 2 T vanilla
- 1 T caramel flavoring
- 1 -2 banana (s) mashed
- Caramel sauce, extra bananas for topping
- Sift dry ingredients.
- In a large bowl combine egg, milk, oil & vanilla.
- Add dry ingredients to wet ingredients and stir until smooth. Add bananas. If batter is thick add milk to thin.
- Place about 1/4 cup batter on pancake griddle. Drizzle with caramel and either swirl batter or cover with small amount of batter. I use a medium size scoop for the base pancake.
- Flip when bubbles begin to form and the edges began to rise up.
- Top with fruit and caramel sauce. I didn’t have any extra bananas so I used blueberries.
