I tried this a couple of weeks ago when we had a friend’s kids over.  The pancakes were a big hit especially with the baby.IMG_20140405_090514

  • 3 eggs
  • 3/4 cup whole-wheat flour
  • 6 tablespoons milk
  • 4 1/2 teaspoons jam or jelly
  • 1/4 + 1/8 teaspoon baking powder
  • 1 cup peanut butter
  • Butter, for cooking
  • Top jam or jelly
  1. In a blender, combine the eggs, flour, milk, baking powder, and  peanut butter. Blend until just combined, less than 30 seconds. Next add jam or jelly and pulse until just blended about 5-10 seconds.
  2. Heat the griddle to 350 degrees F or set a large saute pan over medium low heat. Melt the butter, and then add the batter by the spoonful and cook until lightly brown on both sides,
  3. Top with jam or jelly.
