I tried this a couple of weeks ago when we had a friend’s kids over. The pancakes were a big hit especially with the baby.
- 3 eggs
- 3/4 cup whole-wheat flour
- 6 tablespoons milk
- 4 1/2 teaspoons jam or jelly
- 1/4 + 1/8 teaspoon baking powder
- 1 cup peanut butter
- Butter, for cooking
- Top jam or jelly
- In a blender, combine the eggs, flour, milk, baking powder, and peanut butter. Blend until just combined, less than 30 seconds. Next add jam or jelly and pulse until just blended about 5-10 seconds.
- Heat the griddle to 350 degrees F or set a large saute pan over medium low heat. Melt the butter, and then add the batter by the spoonful and cook until lightly brown on both sides,
- Top with jam or jelly.
