Wow, this is the week for recipes and reader requests. I had a request for my Quiche recipe. So it isn’t acutely my recipe. It is from The Hedges. The Hedges was a resturant located in the Neiman-Marcus in Ft. Worth, TX. Quiche Lorraine was one of their signature recipes.  As for the authenticity of the recipe, years ago local restaurants would publish their recipes in the food section of the Ft. Worth Star-Telegram. That is how my mom got the recipe.

  • 8-inch pie tin lined with pastry
  • 4 slices crisp bacon, chopped
  • 4 thin onion slices, sautéed until soft
  • 8 paper-thin ham slices, shredded
  • 8 paper – thin slices Swiss cheese
  • 3 eggs
  • 1/3 tsp, dry mustard
  • 1 C light cream, heated
  • Nutmeg
  1. Bake pastry @ 450 degrees for 10 minutes.
  2. Sprinkle bacon and onion in bottom of crust. Add half of the ham; spread 4 slices of cheese over ham. Add remainder of ham and top with remaining cheese.
  3. Beat eggs and mustard, add hot cream and continue beating. Pour over ham and cheese. Let stand 10 minutes. Sprinkle a tiny bit of nutmeg on top and bake at 350 degrees until custard is set.
