This is not an original recipe but rather my version of it.

Ingredients

  • Eggs (1 per serving)
  • Thick sliced bread (1 per serving)
  • Pepper
  • cherry tomatoes
  • Cheese
  • Frozen Hash browns
  • 1 small onion
  • parsley chopped
  1. Slice bread into thick slices. I used 5 grain Italian bread. Cut the center out bread with a round cookie cutter, glass or a knife.  Save the centers.
  2. I like to cook this on by flat-top electric grill. Although I have used a skillet before.  Heat grill to 350.  Spray grill with cooking spray.
  3. Chop onions for hash and tomatoes while grill is heating.
  4. I cook hash browns on half of the grill. Start the hash browns a few minutes before the eggs.
  5. Place bread slices (nest) on grill.  Add egg to whole. After egg has begun to set add enough cheese to cover it and flip over. Takes about 2-3 minutes.
  6. Next add onions to potatoes and cook until potatoes are crispy.
  7. Remove egg/bread combination.
  8. Toss bread cut outs on grill to brown. Serve on side of plate.
  9. Finish off egg/bread nests with a handful of tomatoes. Top with a sprinkling of parsley and cheese.
