I was hungry.
Between work and extra holiday stuff life is too busy for things like grocery shopping. OK, maybe I look for any excuse to not go grocery. Well, I just hate going to the grocery store. I really don’t like any form of shopping. I found some left over cherry pie filling in the fridge while fixing breakfast. Got to thinking that I don’t think I had ever had cherry waffles. In my opinion cherry is only 2nd to chocolate.
Cherry Cheesecake Waffles
1 ¼ C flour – sifted
1 T. baking powder
1 T. sugar or 1 1/2 teaspoons Truvia baking blend
½ t. salt
1 beaten egg
1 C. milk
2 T. oil
2 T vanilla
½ C. cherry pie filling
4 oz cream cheese — needs to be soft enough to crumble
- Sift dry ingredients.
- Combine with egg, mil, oil & vanilla.
- Stir until smooth
- Add cherries and cream cheese.
- Cook on hot waffle iron.
Makes 6 good size waffles.
