My theme for 2011 is attitude and no not to get an attitude but to be more positive. (Ok, so those that know me can stop laughing now.) Well, I have decided I need to change some other habits to improve my attitude. So, I have started with cooking more at home. It is easy to go out or pick up a pizza after a long day at work. That can become expensive. Some of my favorite memories with my family and growing up are of the conversations and fun we had around the dinner table. So for the past week I have focused on cooking at least one meal. Here is my report from last week. Sorry no pictures to go with the meals.
Last Week
Sunday: BBQ Beef Sandwiches, squash, green beans & potatoes
Tuesday: Veggie Soup, Salad, Grilled Ham & Cheese Sandwiches, Homemade cherry-vanilla pudding (I was experimenting again)
Wednesday: Veggie Soup, Cornbread & Salad
Thursday: Ate out due to schedule
Friday: Steamed dumpling, coconut rice, grilled chicken, steamed veggies.
Saturday:
Breakfast: Buttermilk Waffles
Dinner: Hot dogs, Ranch Style beans and chips
This Week
Sunday: Lasagna, salad, garlic bread and apple caramel cake
Monday: Chicken tacos, salad, queso
